Week 4 of 2017.  Keeping with New Years resolutions and healthy living, I tried out a delicious salad last week. My goal is not only to eat healthier, but to also incorporate more whisky into my life.  And what better way to achieve both goals by eating a healthy salad paired with a drop or 2 (3) of whisky.   How does Bacon, Broccoli, Butternut and Ballantine’s salad sound?

I don’t know about you, but for me, keeping New Years resolutions are difficult.  With all the hustle and bustle at the start of a year, I look up in February and can’t even remember what my resolutions were.  But with this salad, it is easy to tick off both.    It is colourful and perfect for the hot summer months and if you leave out the bacon and replace it with chickpeas, you have a vegetarian option.  This is a salad that every grownup can get behind.

I chose the Ballantine’s Finest because it is rich robust and affordable. At R 200 a bottle, putting some in a salad dressing is affordable.

My tasting notes for this whisky included fruit cake, glazed cherries, wood, hints of peat and smoke. The Ballantines Finest is super smooth and full-bodied. Rich and complex, it is an easy drinking dram that will have you reaching for a second glass. It also pairs wonderfully with Camembert cheese.

So onto the salad first.

Broccoli, Butternut Bacon Salad

Bacon Broccoli butternut ballantine' salad dressings whisky salad ingredients

  • 1/2 cup Broccoli (steamed)
  • 2 rashers of Bacon (grilled and cut up)
  • 1/2 cup Butternut (grilled and cut into bite size pieces)
  • 50g Feta Cheese crumbled
  • handfull Pomegranate seeds

Mix the first 4 ingredients together and sprinkle with pomegranate seeds.  

Ballantine’s Salad Dressing

  • 1/3 cup Ballantine’s Finest whisky
  • 1/2 cup Olive oil
  • 3 Tbsp Red wine vinegar
  • 1/2 tsp brown sugar
  • 1/4 tsp salt
  • 1 Tbsp fresh thyme
  • 1 garlic clove minced
  • 1/2 tsp Dijon mustard

Combine in a suitable blow and whisk the Ballatine’s Salad Dressing ingredients together.  Serve over salad, for a delicious grown up salad dressing.  Store in the fridge.
